How does a professional coffee taste tester drink coffee for coffee brands?

Please no one-liners. How would you cleanse the taste of one coffee and taste another? Drinking a sip of water? Also what does a taste tester look for in a Coffee taste and aroma?
The tasters are no different to tea/ wine/brandy tasters.
They do not drink they taste and spit it out.
They then rinse out their mouth with water ( usually) and this cleans the palette enough to taste the next sample.They look for taste (bitterness)aroma and colour and strength.
These guys noses and mouths are often highly insured in the millions.
We went to a cognac tasting and the taster had to remember last years taste so he could blend this years brandy to be 99% identical to last years.
